Super bowl, Super Menu, Super Fun!

SuperBowl Sunday is just hours away! I’m looking forward to the game. My team is Seattle. Not because I really like the team per se but because they are rivals of the Forty Niners and I HATE the Niners.

Go Seahawks!

The GF and I are having another couple over for the festivities. I’m in charge of the food this year. (pray for me) So, I thought I’d share my menu with you.

Homemade burritos – It’s only going to be my second time making burritos. I think I’m going to use roasted chicken as the meat.

Home style potato salad

Fruit, cheese and nut plate – I think I’ll have kiwi, grapes, watermelon, sharp cheddar, another cheese TBD, cashews, macadamia and pistachio nuts.

Assorted tortilla chips/ with assorted dips

Beverages – Martinelli’s Sparkling Apple Cider, Jones Soda, Beck’s and Dos Equis beer.

Desert – Carrot cake

The Great Peppermint Iced Tea Discovery

What’s that old saying, necessity is the mother of invention? Welp, it’s true. This week was one of those weeks I didn’t have the whatever it takes to deal with grocery shopping. So, I was scrounging around the cupboards trying to whip up dinner from whatever was on hand.

On Wednesday we ran out of sparkling water. That was a real loss as we drink that stuff with dinner most of the time during the week. What to do? Well early in the day whilst making lunch I decided to have some nice hot peppermint tea. But, it occurred to me that maybe iced peppermint tea was the answer to my sparking water dilemma. Which was drinking plain old tap water or having something hot to drink with dinner.

So, I made the tea, then added sugar, let it cool and then put it in the freezer. And, 30 minutes later, voilà! Iced peppermint tea. And it was so amazingly refreshing. The problem of what to drink with dinner was solved.

What’s interesting though is that I’ve never been a fan of iced tea. Or as they call it in the Southern United States, sweet tea. I’m not sure why they call it sweet tea. I mean do people drink cold tea with no sugar?

Anywhoo, I’ve never been a fan of iced tea. I mean I could drink it but it would never be my first choice. It’s always had a slightly bitter aftertaste which I didn’t particularly like.

So imagine my surprise when my peppermint iced tea experiment turned out so well! But, alas, today is Friday and I can no longer put off grocery shopping. So, even though the Girlfriend and I enjoyed a couple of dinners with peppermint iced tea, it’s time to get back to the sparkling water.

Here’s a little story…about my perfect (fantasy) day…

I would wake up in this bed…

…and eat a couple of these…

…with a cup of this…

…and look out this window…

…then put this record on…

…this turntable..

…take a nice hot bath…

…then get dressed in a nice worn pair of jeans, a pink t-shirt and a green wool sweater and these boots..

…grab my backpack..

…and these for later..

…then jump in this…

…stop by and pick her up…

..hit the road..

…while we listen to (yes, on cassette because it’s my fantasy)…

…and around noon…

(fries go with everything)…then we hit the road again….

…and after a few hours on the road…

…we arrive at the beach and we sit and watch the surfers and…

… I rent a board and hit the waves while Alicia checks me out from the shore…

…then as evening comes we stroll on over to the boardwalk…

…then we get back in the truck and head down the beach to our…

…little plane and we take off and fly to…

…our tiny cottage on a private beach and…

…we take a nice long hot shower and…

…afterwards we share a little ice cream…
